Hi Brian,Yes I could overlay weld ss, but that is a ton of work compared to electroplating.  Yes your Gasket will extrude if you use rubber.  I just did some compression testing for a Psub member with cork he supplied.  The cork compresses .03 inch  and stays compressed and does not extrude.   I tested the cork material to 1,555 psi.
