Hi Jon,

Two reasons really....

1)  To get the height of the coaming edge to the recommended 30" above 
waterline (decrease risk of swamping.

2) Simple aesthetics.

The most functional, (but quite ugly) version of this I have seen, was a 
clear plexi wrap on Asherah.
