Also if your going digital for sensors of any sort... Have a look into
Arduino Microcontrollers! They have pressure sensors, temperature
sensors, humidity sensors, and you can even hookup a GPS receiver and
Bluetooth interface etc, I'm currently designing an autonomous boat (for
research and water quality testing purposes) and im thinking about using
the arduino + GPS as the whole navigation setup for the boat...

You better ask Alan about the underwater use of potentiometers, and how
to
waterproof them. Personally, I hope to find a way around it by using an
inductive device, that I hope will lend itself perfectly to epoxy
potting.
