Didnt get any replies to this.  Maybe i was just being daft.
 
But, in case anyone is interested.
 
As suspected, copper is no good for the sealing washers.  Apparently PTFE is ok as well as monel or even dowty washers as long as they have a stainless body.  I've replaced the copper washers with ptfe ones.

But thinking about it, it seems like a bit of a daft idea.   Both pipes will have seawater running through them.  Copper\Stainless\Seawater.  Not a good idea?
 
Is this going to be an issue?  It doesnt sound right to me.  What else could\should I use as the seal?
